Cheesy Dauphinoise Potatoes

Take your Dauphinoise potatoes to the next level by adding the glorious taste of Mexicana in-between the potato layers. Be prepared to fall in love. 

Step OnePreheat the oven to 180°C fan.

Step TwoMelt butter in a saucepan and gently cook the garlic until fragrant.

Step ThreeAdd the milk and cream and bring to a gentle simmer.

Step FourAdd the sliced potatoes and cook until just tender.

Step FiveLayer the potatoes into a buttered baking dish, adding cheese between layers.

Step SixPour over the remaining cream mixture, cover and bake for 30 minutes.

Step SevenRemove the cover and bake for a further 30 minutes until golden and bubbling.
