Nduja, Chorizo & Mexicana® Toastie

For those who’s toastie needs to hit the tastebuds with some lip-smacking heat, this decadent, spicy cheese toastie isn’t for the faint hearted!

 

1. Take the slices of sourdough and butter each one liberally. Turn the slices over so they are butter-side to board. Spoon the nduja paste onto one slice of sourdough and spread evenly before layering on the chorizo slices.
2. Next add the grated cheese followed by the rocket. At this stage, add jalapeño slices for additional heat.
3. Put the other slice of buttered sourdough on top (butter-side facing outwards) and press down slightly to compact all the filling.
4. Place the toastie in the draw of the air fryer and toast for 5 minutes at 180C until the bread is golden and the cheese has melted. Alternatively, place the toastie in a sandwich grill and toast for 3 – 5 minutes.

Cook’s Notes:
– This toastie can also be made in a non-stick frying pan. Place the sandwich over a medium heat and allow to fry for 3 – 4 minutes – flip once one side is golden and repeat on the other side until the bread is golden and cheese is oozy and melted.
