Spicy Protein Pancakes

These pancakes mix full-on taste with big protein hits.  Great as a post-workout treat (or at treat at anytime, if we’re being honest!)

Step 1:Heat a frying pan over medium heat with a little butter. Add the spring onions and cook for 3-4 minutes until softened and lightly golden. Set aside.

Step 2:In a blender, add the cottage cheese and egg and blend until smooth.

Step 3:Add the flour, baking powder, sugar, and salt. Blend again until just combined, adding a splash of milk if needed to loosen.

Step 4:Stir through the grated Mexicana and cooked spring onions.

Step 5:Cook spoonfuls of the batter in the pan for 2-4 minutes on one side, then flip and cook for a further 1-2 minutes until golden.

Step 6:Serve warm with Greek yoghurt and extra spring onions.

1 tbsp Baking Powder
1 tbsp Sugar
Pinch of Salt
340g Cottage Cheese
1 Egg
Milk (as needed)
125g Mexicana Cheese, grated
5–10 Spring Onions, chopped
Butter (for frying)
Greek Yoghurt (to serve)
