Protein Breakfast Bagels

Power-up your mornings with this tasty and protein-rich breakfast idea. Start your day the right way.

Step 1 Cook the bacon in a pan until crispy, then chop and set aside.

Step 2Whisk together the eggs, cottage cheese, chives, salt and pepper. Stir through the bacon.

Step 3Pour into a lined baking dish and bake at 180°C for 15–20 minutes until set.

Step 4Cut into portions and place into bagels.

Step 5Top with Mexicana cheese and a spread of sriracha mayo.

Step 6Return to the oven for 5 minutes until the cheese melts, then serve.
